Recipe for Honey Glazed Pineapple

  • 1/2 cup honey
  • 1/4 cup fresh lime juice
  • 1 tablespoon grated lime zest
  • 2 teaspoons orange juice
  • 1 large ripe pineapple

Whisk honey, juices and zest in large glass baking dish. Peel pineapple; cut crosswise into 6 or 12 rounds. Remove and discard core. Place pineapple rounds in the dish and turn to coat evenly. Cover with plastic wrap. Set aside at room temperature for 1 to 2 hours.

Bring outdoor grill or grill pan to medium heat. Remove pineapple from marinade, reserving marinade. Grill until golden brown, about 3 minutes on each side. Transfer to serving dish. Pour reserved marinade over. Drizzle with honey. Serve warm or chilled.

Compliment each serving with frozen yogurt or a dollop of fresh whipped cream.
