Recipe for Summer Lettuce Wraps

  • 2 hearts romaine lettuce
  • 1 pound large fully cooked shrimp, OR
  • 1 pound seasoned, cooked chicken breast strips
  • 5 tablespoons reduced-fat mayonnaise
  • 1 teaspoon chopped garlic
  • 1 lemon, zested and juiced
  • 1/2 cup grated parmesan cheese
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil

Cut bottoms off the romaine and cut the heads in half lengthwise. Wash lettuce, separate the leaves and drain.

Place mayonnaise, garlic, lemon, cheese, Worcestershire and pepper into the blender and mix. Slowly stream the extra-virgin olive oil into the dressing. When the mixture has blended and thickened, remove the dressing to a bowl.

Place lettuce on a serving platter. Spread a generous portion of dressing onto a lettuce leaf and then fill with shrimp or sliced cold chicken like a summer taco.
